Zucchini Tomato Bake Recipes

Ingredients :

2 tsp margarine or oil

1 round of mountain bread

2 medium zucchini cut in half, crossways, and then into strips

3 tomatoes, sliced

4 spring onions (shallots), chopped

2 tsp fresh herbs, chopped or 1 tsp dried mixed

pinch salt - optional

pinch pepper

1/2 medium onion, sliced very finely

2 tbsp sesame seeds

Sauce :

1 tbsp tahina paste

juice 1/2 lemon

1/4 tsp finely chopped or minced fresh ginger

1/4 tsp prepared mustard

water to blend to a thin paste

Method :

Spread margarine or oil over casserole. Place bread in this. Push into corners without breaking it, and leave excess hanging out. Place half of the zucchini in the bottom. Cover with the sliced tomato. Sprinkle spring onions (shallots), herbs, salt and pepper over. Place the remainder of the zucchini over this, then finely sliced onion. Blend sauce ingredients. Pour mixture over vegetables. Sprinkle with sesame seeds. Fold edges of bread in around the edge of the casserole to form a crust around the edge. Bake for 40-45 minutes or until the bread is brown and crusty, and the zucchini is tender.
