Mushrooms are an ideal health food - they have almost no fat, sugar or salt, and they supply valuable dietary fibre. Mushrooms are also a valuable source of vitamins, especially the B-complex vitamins riboflavin, niacin, thiamin and pantothenic acid. Mushrooms are one of the very few vegetable sources of vitamin B12 (A vitamin rarely found in non-animal foods and sometimes lacking in vegetarian diets.)

There's also some iron, potassium (important to balance the sodium from salted foods), and phosphorus. To add to their virtues, mushrooms have only 75kJ (18 cals) in a 100 gram serving - making them a slimmer's delight.
