pork, cubed

chili powder, more if required

turmeric powder

cucumbers, cut into 4 cm lengths

big onions, halved

shallots, sliced

oil

cloves garlic, sliced

piece ginger, sliced

sugar and salt to taste

a little water

Mixed together

mustard

vinegar

Method :
  1. Take half the ginger, garlic and shallots and grind fine.
  2. Heat oil in a pan and fry the ground ingredients till fragrant.
  3. Add sliced ginger, pork and salt to taste, and fry for a few minutes.
  4. Mix chili powder and turmeric with a little water to form a smooth paste, then add to the meat.
  5. Stir well and add a little water to cook the pork, and simmer over low heat.
  6. Meanwhile mix the mustard, sugar and vinegar in a bowl and keep aside.
  7. Add onions to the meat and stir well.
  8. After 10 minutes add cucumbers and lastly the mustard and vinegar mixture.
  9. Stir well and simmer for 10 minutes.

Serves 4 - 6
