Jamboree Hot Pot Recipes

Ingredients :

250g assorted beans

500g rump steaks

3 tbsp cooking oil

2 large onions

2 cups beef stock

6 field mushrooms

125g frozen peas

garam masala, oregano, thyme

salt and pepper

1 cup cream

Method :
  1. Soak an interesting mixture of beans overnight in four times their volume of water.
  2. Trim the steak and heat the oil.
  3. Sauté the meat and then the sliced onions.
  4. Place meat and onion in a flameproof casserole and pour in the stock.
  5. Add the beans, bring to the boil and reduce to a simmer.
  6. Cover and cook gently for 2 hours.
  7. Trim the mushrooms and put in the pot with the peas.
  8. Season to your taste.
  9. Cook only until the mushrooms are tender, then take off the heat and stir in the cream just before serving.

Serves 4 - 6
