green mangoes, sliced fine or in cubes

brown sugar

pods garlic, washed and peeled

bottle vinegar

dried chilies

large piece ginger

Method :
  1. Put the mangoes in a saucepan, cover with vinegar and boil till soft.
  2. Grind fine the chilies, ginger and garlic and add to the saucepan.
  3. Mix in the sugar and salt to taste and simmer on low heat till mangoes are soft.
  4. Adjust seasoning if necessary.
  5. If you want it more sour add more vinegar.
  6. When done, cool before storing in airtight jars.

Serves 6 - 8
