Method :
- Wash and clean chicken and pat dry.
- Rub chicken in and out with the ground spices, flour, salt,
sugar, dark and light soy sauce and lemon juice.
- Prick chicken with a fork and leave to marinate for an hour or
more.
- Grease a roasting pan with butter and place chicken in it.
- Dot chicken with butter and roast in moderate oven for an hour
or until done, basting occasionally with pan juices.
- When cooked dish out and cut chicken into serving pieces.
- Heat pan juice adding a little water and serve with chicken.
