Roast Chicken Cooking Recipes

large chicken

dark soy sauce

light soy sauce

castor sugar

salt

flour

juice of two lemons

butter

 

Grind together

cinnamon stick

star anise

cloves

piece fresh nutmeg

black peppercorns

Method :
  1. Wash and clean chicken and pat dry.
  2. Rub chicken in and out with the ground spices, flour, salt, sugar, dark and light soy sauce and lemon juice.
  3. Prick chicken with a fork and leave to marinate for an hour or more.
  4. Grease a roasting pan with butter and place chicken in it.
  5. Dot chicken with butter and roast in moderate oven for an hour or until done, basting occasionally with pan juices.
  6. When cooked dish out and cut chicken into serving pieces.
  7. Heat pan juice adding a little water and serve with chicken.
