ladies' fingers

shallots

dried chilies

fresh red chilies

piece belacan, toasted (optional)

cloves garlic

stalks lemon grass, ground fine

fresh turmeric, ground fine

water and extract juice

oil

salt to taste

Method :
  1. Heat oil in a pan and fry ground ingredients till fragrant.
  2. Add tamarind water, ladies' fingers and fish head, and simmer over low heat till fish and vegetables are tender.
  3. Add salt to taste and serve hot.
