lemon rind, lemon juice, garlic, sugar, pepper, salt and oregano. Grease
rack of broiler pan very well. Lay salmon steaks on it and brush well
with oil mixture. Put about 4 inches (7.5cm) from the heat and broil
about 5 minutes. Turn salmon steaks carefully, brush with oil mixture
again and continue broiling 2-3 minutes or until salmon flakes easily
with a fork. Add sliced olives to remaining oil mixture if desired and
heat just to boiling point. Serve over salmon.
