Fish Fillets en Papillote Recipe

Ingredients :

fish fillets (salmon, shark, any white fish, mackerel etc.)

lemon

medium zucchini or carrot (optional)

butter or olive oil

herbs, fresh or dried (try oregano, dill, rosemary, parsley, thyme)

salt and pepper

Method :

  1. Preheat the oven to 350oF (190oC).

  2. Lay four 12-inch squares of aluminum foil or parchment paper on a baking sheet.

  3. Place a fillet of fish on each square, dot with butter or drizzle with olive oil, and add a few sprigs or sprinkles of herbs, as desired.

  4. Slice the lemon thinly and distribute the rings among the packets.

  5. Season well with salt and pepper.

  6. If using zucchini or other vegetables, grate them in a food processor and distribute them among the packets.

  7. Fold the packages in half and twist the edges together to seal.

  8. Bake for 20-25 minutes until the packages are puffed up with steam.

  9. Serve individual packets on each plate and tear them open with forks.

Serves 4

"En papillote" is the French term for food cooked in little parchment paper or foil packages. Although parchment paper makes a lovely looking package, aluminum foil makes a tighter and more reliable seal for busy cooks.
