South Sea Island Cod Steaks Recipes

Ingredients :

4 large cod steaks

cold water

3 lemon slices

1 small bay leaf

1 small onion, peeled and sliced

2 tsp salt

1 carton or 142 ml soured cream

25 g melted butter or margarine

1 tbsp milk

16 canned peach slices, well drained

4 tbsp desiccated coconut

Method :
  1. In a large frying pan, arrange cod steaks in a single layer.
  2. Cover with water then add lemon slices, bay leaf and onion slices.
  3. Season with half the salt.
  4. Bring water just up to the boil.
  5. Lower heat and cover.
  6. Poach very gently for 1/4 hour.
  7. Lift out of pan with a fish slice and drain thoroughly by standing on a clean tea towel.
  8. Transfer to a buttered heatproof dish.
  9. Beat cream with butter or margarine, the milk and rest of salt.
  10. Spoon over fish.
  11. Top each with 4 peach slices then sprinkle with coconut.
  12. Grill 3 to 5 minutes or until cream begins to bubble and coconut is crunchy and golden.

Serves 4 - 6
