Trout Fillets in Sousing Drink Recipe

Ingredients :

medium trout, cleaned and gutted


vegetable oil

tarragon vinegar

white wine

cloves garlic, crushed

green peppercorns, crushed


bay leaves, crumbled

orange, thinly sliced, to garnish

salt and pepper

grated rind and juice of 2 oranges

grated rind and juice of 2 lemons

Method :
  1. Toss the trout in the flour seasoned with salt and pepper.

  2. Fry the fish in the oil over moderate heat for 3-4 minutes on each side and transfer to a serving dish.

  3. Mix together all the remaining ingredients, except the orange slices.

  4. Pour into the pan, bring to the boil and boil for 3 minutes.

  5. Leave to cool.

  6. Strain the liquor over the fish, cover and chill overnight.

  7. Garnish with the orange slices.

  8. Serve with rye bread and salads.
