How to Dress a Crab

Never buy a crab without making sure that it is dry inside. To dress a crab, remove all the claws, then tear the centre apron from the main shell. At the point between the two big claws where the apron joins the shell is the mouth. Behind this is a small sac which is the stomach: DISCARD THIS SAC.

Around the apron are the feathery grills which are harmless but unsightly. Scrape all the soft brown meat from the shell. Crack the claws and remove all the white meat.
