Beef in Red Wine (boeuf bourguignonne) Recipes

Ingredients :

1.5lb braising steak

3/4oz lard

1 tbsp flour

7fl oz stock

7fl oz red wine, preferably Burgundy

1 onion stuck with 2 cloves

bouquet garni with garlic salt, pepper

Method :

Cut the meat into 2-inch cubes. Brown in the lard, then sprinkle the flour over and cook for a minute more. Add the stock, wine, onion and bouquet garni.

Season well and cook, tightly covered, for 2 hours in a slow oven (160C, 325F, Gas 3). Check the seasoning and remove onion and bouquet garni before serving.

Serves 4
