Braised Pork with Leeks (sauté
de porc aux poireaux) Recipes
Ingredients :
1lb, pork shoulder, boned
4 leeks
1.5lb potatoes
2 onions
2 tbsp oil
1.75 pints well-seasoned stock
salt, pepper
Method :
Cut the meat
into cubes. Wash and cut the leeks into rings. Peel and cut the potatoes
into small pieces. Chop the onions. Heat the oil in a casserole and fry
the pork and onions, then add the leeks and cook gently until they are
soft. Pour over the stock, season, cover and leave to cook for 30
minutes. Add the potatoes and cook for a further 30 minutes. Check the
seasoning and serve very hot.
