Devilled Sauce (sauce au diable) Recipes

Ingredients :

50g shallots or onions

100ml white brown sauce

15ml chopped parsley and chives

cayenne pepper

Method :

Slice the shallots or onions and put them in an enamel or non-stick saucepan with the wine to reduce by half. Stir this mixture into the brown sauce and cook for a further 10 minutes. Before serving, add the chopped herbs and season well with cayenne pepper. Serve with grilled meat or poultry.
