Heat 3 tbsp oil
in wok till hot. Add flat rice noodles, yellow noodles, chye sim and
water. Stir-fry till vegetables begin to soften. Push noodles to one side
of wok. Add 1 tbsp oil, chopped garlic and Chinese sausage. Stir till
garlic is fragrant. Add chili paste and stir-fry thoroughly with noodles.
Add bean sprouts and remaining seasoning. Stir-fry thoroughly. Push
noodles to one side of wok. Add 1 tbsp oil and pour in beaten eggs.
Quickly cover with noodles. Wait for a few seconds before tossing in
chives and cockles. Stir-fry thoroughly before serving.
