Char Koay Teow Recipes

Ingredients :

300g flat rice noodles

100g yellow noodles

100g chye sim (cut into 5cm lengths)

3 tbsp water

1 tbsp garlic (chopped)

50g Chinese sausage (sliced)

150g bean sprouts (scalded)

4 eggs (beaten)

20g chives (cut into 5cm lengths)

50g cockles (shelled)

Seasoning:

1 tbsp chili paste

3 tbsp light soy sauce

3 tbsp sweet sauce

Method :

Heat 3 tbsp oil in wok till hot. Add flat rice noodles, yellow noodles, chye sim and water. Stir-fry till vegetables begin to soften. Push noodles to one side of wok. Add 1 tbsp oil, chopped garlic and Chinese sausage. Stir till garlic is fragrant. Add chili paste and stir-fry thoroughly with noodles. Add bean sprouts and remaining seasoning. Stir-fry thoroughly. Push noodles to one side of wok. Add 1 tbsp oil and pour in beaten eggs. Quickly cover with noodles. Wait for a few seconds before tossing in chives and cockles. Stir-fry thoroughly before serving.
