Curry Laksa Recipes

Ingredients :

yellow noodles


shallots, sliced

piece ginger, sliced

fresh red chili, sliced

fresh green chili

prawns, shelled and divined

fresh oysters

fish balls

thick coconut milk, from 1 coconut

bean sprouts

curry powder

bunch kesum leaves

salt to taste

Method :
  1. Scald the noodles in hot water.
  2. Drain well and spread 1 tablespoon oil evenly into the noodles.
  3. Heat 3 tablespoons oil and fry the shallots and ginger until fragrant.
  4. Add in curry powder and fry further until fragrant.
  5. Add the ginger, prawns and chilies.
  6. Stir fry for 3 minutes.
  7. Add the coconut milk and bring to boil.
  8. Add the oysters and fish balls and season to taste.
  9. Lastly add the kesum leaves and bean sprouts.
  10. To serve, place the noodles in individual bowls and pour over the gravy making sure that each bowl will contain the oysters, prawns and fish balls.
