dried Chinese mushrooms, soaked
prawns, shelled
white fish

Method :

Soak the vermicelli in cold water for
5 minutes, then scald them in boiling water.

Drain well.

Mix the crushed garlic and pounded
coriander with turmeric powder.

Heat 1 tablespoon oil and fry the
garlic mixture for 2 minutes.

Remove the stems from the mushrooms
and slice thinly.

Dice into small cubes the fresh prawns
and fish.

Add to the garlic with mushrooms.

Fry on medium heat for 5 minutes.

Remove from pan.

Add 2 tablespoons oil to the pan and
fry the sliced onions and chilies.

Add the vermicelli, season with salt
and stir thoroughly.

Add the beans sprouts and stir fry for
1 minute.

Remove from pan.

Pour in the beaten egg, swirl to make
a thin omelets.

Cook until set and remove from pan.

Shred.
-
Add the fried seafood to the fried
noodles, mix well and serve with shredded omelets, and chopped
spring onions.
