Ingredients :

fine rice vermicelli

cloves garlic, crushed

coriander, ground

turmeric powder

dried Chinese mushrooms, soaked

prawns, shelled

white fish

medium onions, sliced

bean sprouts

eggs, lightly beaten

red chilies

stalks spring onions, chopped

peanut oil

Method :
  1. Soak the vermicelli in cold water for 5 minutes, then scald them in boiling water.

  2. Drain well.

  3. Mix the crushed garlic and pounded coriander with turmeric powder.

  4. Heat 1 tablespoon oil and fry the garlic mixture for 2 minutes.

  5. Remove the stems from the mushrooms and slice thinly.

  6. Dice into small cubes the fresh prawns and fish.

  7. Add to the garlic with mushrooms.

  8. Fry on medium heat for 5 minutes.

  9. Remove from pan.

  10. Add 2 tablespoons oil to the pan and fry the sliced onions and chilies.

  11. Add the vermicelli, season with salt and stir thoroughly.

  12. Add the beans sprouts and stir fry for 1 minute.

  13. Remove from pan.

  14. Pour in the beaten egg, swirl to make a thin omelets.

  15. Cook until set and remove from pan.

  16. Shred.

  17. Add the fried seafood to the fried noodles, mix well and serve with shredded omelets, and chopped spring onions.
