Carrots With Fresh Dill Recipes

Ingredients :

450 g

1 tablespoon

25 g

3/4 teaspoon

vegetable oil

butter or ghee

cumin seeds

piece fresh root ginger, finely chopped

fresh green chilies, seeded and finely sliced

ground coriander


chopped fresh dill


dill sprigs, to garnish

pinch ground asafoetida

Method :
  1. Cut carrots into 0.3 x 2.5 cm (1/8 x 1 in) sticks and set aside.

  2. Heat oil and butter or ghee in a heavy based pan and fry cumin seeds for about 30 seconds, until they begin to pop.

  3. Add asafoetida, ginger, chilies, coriander and turmeric and fry for 2 minutes.

  4. Stir in carrots and 6 tablespoons water.

  5. Cook over a medium heat, covered, for 5 minutes or until carrots are just tender.

  6. Uncover, add chopped dill, season with salt and cook over a high heat for about 2 minutes to evaporate any excess liquid.

  7. Serve hot, garnished with dill sprigs.

Serves 4

This recipe is also delicious chilled and served as a salad.
