Chicken With Lentils Recipes

Ingredients :

boneless, skinless chicken breasts

red split lentils


vegetable oil

green cardamom pods, bruised

onion, finely sliced

piece fresh root ginger, grated

lemon juice

cumin seeds

cloves garlic, finely sliced

salt and cayenne pepper

Method :
  1. Wash chicken, pat dry and cut into cubes.

  2. Set aside.

  3. Wash lentils, put in a large saucepan and add 950 ml water and turmeric.

  4. Bring to the boil, then cover and simmer for 20-30 minutes or until tender.

  5. Drain thoroughly.

  6. Meanwhile, heat half the oil in a large saucepan, add cardamom pods and fry for 1 minute.

  7. Add onion and fry, stirring frequently, for about 8 minutes, until golden brown.

  8. Add chicken and fry for 5 minutes, until browned all over.

  9. Add ginger and fry for 1 minute more.

  10. Season with salt and cayenne pepper.

  11. Stir in lemon juice and 115 ml water and cover.

  12. Simmer for 25-30 minutes or until chicken is tender.

  13. Stir in lentil mixture and cook, stirring, for 5 minutes.

  14. Meanwhile, heat remaining oil, add cumin and garlic and fry, stirring, until garlic is golden.

  15. Transfer chicken and lentils to serving dish and pour garlic mixture over.

  16. Serve hot.
