Cucumber Raita Recipes

cucumber
natural yoghurt
chopped coriander leaves
chopped fresh mint
green chili, seeded and finely chopped
cumin seeds
mustard seeds
coriander or mint leaves, to garnish
salt |
Method :

Cut cucumber into 0.3 cm x 1 cm
sticks and place in a bowl.

Add yoghurt, coriander, mint and
chili and stir gently to mix.

Season with salt.

Chill for 30 minutes.

Meanwhile, put cumin and mustard
seeds in a frying pan and dry roast over a medium heat for 1-2
minutes, until they begin to pop.

Leave to cool, then sprinkle over
yoghurt mixture.

Serve chilled, garnished with
coriander or mint leaves.
Makes about 350 ml
