vegetable oil
onions, finely chopped
cloves garlic crushed
Garam Masala
turmeric
lemon juice
chopped fresh parsley
parsley sprigs, to garnish

Method :

Wash chicken livers and remove any
green tinged parts.

Set aside.

Heat oil in a frying pan, add
onions and cook over a medium heat, stirring for about 8 minutes,
until soft and golden brown.

Stir in garlic, garam masala and
turmeric and season with salt and pepper.

Fry for 1 minute, then stir in
chicken livers and fry for about 5 minutes, stirring frequently,
until livers are browned on outsides but still slightly pink in the
centre.

Sprinkle with lemon juice and
parsley.

Serve hot, garnished with sprigs of
parsley.
Serves 4 as a starter.
Frozen chicken livers can be used : thaw
at room temperature for 3-4 hours before using.
