Dry Chicken Curry Recipes

large chicken

large onions, sliced fine

piece young ginger, sliced very fine

chili powder

piece cinnamon stick

stalks spring onions, chopped


salt to taste

juice for one lime

Method :
  1. Heat the oil in a wok over high heat.

  2. When oil is smoking, add the cinnamon stick, sliced ginger and half the onions, and fry till golden.

  3. Add chicken pieces and salt and brown.

  4. Add the chili powder and fry over high heat, stirring gently.

  5. Cover and simmer over medium heat, until the liquid dries and the chicken is tender.

  6. Add lime juice or one tablespoon vinegar, and the spring onions, and stir quickly before dishing out.

Serves 6 - 8
