duck, cleaned and cut into spices

large onion, sliced

cardamoms

small stick cinnamon

piece ginger, shredded fine

turmeric powder

ground black pepper

ground coriander

fresh red chilies, slit lengthwise

salt

hot water

vinegar

potatoes, peeled and halved

peas

oil

half a cabbage, cut into wedges

Method :
  1. Heat oil in a large, heavy bottomed pan, and fry cardamoms, cinnamon and onions till golden.
  2. Add ginger, turmeric, pepper and coriander and fry for 2 minutes.
  3. Add duck and cook till light brown.
  4. Add chilies, salt, water and vinegar and stir well.
  5. Cover and simmer on low heat for 45 minutes or until duck is tender.
  6. Skim off any excess fat, then add potatoes and cook until soft.
  7. Add peas and adjust seasoning if necessary.
  8. Cook for a few more minutes then dish out.

Serves 6 - 8

Indian women grind dried turmeric into a paste with a little water, and rub it onto their face to keep their complexions clear and free of blemishes.
