Method :
- Heat oil in a large, heavy
bottomed pan, and fry cardamoms, cinnamon and onions till golden.
- Add ginger, turmeric, pepper and
coriander and fry for 2 minutes.
- Add duck and cook till light
brown.
- Add chilies, salt, water and
vinegar and stir well.
- Cover and simmer on low heat for
45 minutes or until duck is tender.
- Skim off any excess fat, then add
potatoes and cook until soft.
- Add peas and adjust seasoning if
necessary.
- Cook for a few more minutes then
dish out.
Serves 6 - 8
Indian women grind dried turmeric into a
paste with a little water, and rub it onto their face to keep their
complexions clear and free of blemishes.
