eggs, hard boiled and sliced in half

finely chopped

finely chopped

shredded fine

ground coriander

ground turmeric

chili powder

tomatoes, diced

hot water

oil or ghee

garam masala

salt to taste

Method :
  1. Heat oil in a pan and fry the onions, garlic and ginger till soft and golden.
  2. Add coriander, turmeric and chili and fry for a minute.
  3. Add tomatoes and season to taste.
  4. Stir over medium heat for 5 minutes.
  5. Add hot water, cover and simmer till gravy thickens.
  6. Stir in garam masala and the eggs.
  7. Bring to the boil, then remove from heat.

Serves 6 - 8
