beef, cubed

ground aniseed

ground cumin

ground coriander

dried chilies, ground

stalk lemon grass

large onions, sliced fine

cloves garlic, crushed

turmeric powder

piece stick cinnamon

ground black pepper

tamarind juice

coconut milk from 1/2 grated coconut

oil

salt to taste

Method :
  1. Mix the ground curry spices with a little water to form a paste and add to meat.

  2. Add ground chilies and mix well.

  3. Leave to marinate for 30 minutes.

  4. Heat oil in a deep pan and fry the onions, garlic and lemon grass until fragrant.

  5. Add the meat mixture and stir well.

  6. Pour in tamarind juice, and simmer gently for 5 minutes.

  7. Add coconut milk, salt and black pepper.

  8. Cover and simmer till meat is cooked.

Serves 6 - 8
