lamb or mutton
ripe tomatoes, blended or ground
large onions, sliced fine
oil
bay leaves
shallots
piece ginger
cloves garlic
fresh red chilies
cardamoms
stick cinnamon
black peppercorns
Heat oil in a deep pan and fry onion till golden.
Add (A - grind together) and meat and brown well, sprinkling a little water if necessary to prevent the spices from burning.
Add tomato and stir well.
Add 4 cups water, bay leaves and salt to taste, and simmer over low heat until meat is tender.
Sprinkle (B - grind together) on, and serve hot, garnished with chopped coriander leaves.
