Murghal Shredded Duck Recipes

Ingredients :

boneless fuck breasts, skinned

vegetable oil

onion, finely chopped

quantity Cashew Nut Masala made with 115 g cashew nuts

turmeric

desiccated coconut

sultanas

natural yoghurt

double cream

unsalted cashew nuts

green chili, seeded and chopped

Method :
  1. Wash duck breasts and pat dry with absorbent kitchen paper.

  2. Slice duck into 0.5 cm thick strips.

  3. Heat 3 tablespoons oil in a large frying pan, add duck and cook over a high heat for about 5 minutes, until browned all over.

  4. Remove duck from pan with a slotted spoon and set aside.

  5. Add onion to pan and cook, stirring, for 5 minutes for until soft.

  6. Stir in cashew nut masala and turmeric and fry for 2 minutes.

  7. Stir in coconut, sultanas, yogurt, cream and duck.

  8. Cover and cook over a low heat for 15-20 minutes, stirring occasionally, until duck is tender.

  9. Just before serving, heat remaining oil in a small pan, add cashew nuts and fry for 2-3 minutes, until golden.

  10. Add chili and fry for 1 minute more.

  11. Transfer duck to a warm serving dish, spoon over cashew nut and chili mixture.

  12. Serve hot.
