Heat oil in a deep pan or pressure
cooker.

Add cumin seeds.

When cracking, add mutton and brown
well.

Add the ground spices and chili
powder, turmeric, garam masala, salt and sugar.

Fry for 3 minutes.

Add capsicums and potatoes and fry
for about 5 minutes.

Add the yoghurt and cook for a few
more minutes, mixing the gravy thoroughly.

Add 2 cups water and simmer over
low heat, or cook under pressure till meat is tender.

Serve garnished with coriander
leaves.

This recipe usually includes 1/4
teaspoon onion seeds (Kalonji) if available.

The seeds are added with the cumin.
