green peppers (capsicums)

oil

cumin

chili powder

turmeric powder

garam masala

potatoes

yoghurt

sugar

bunch coriander leaves

cloves garlic

piece ginger

shallots

large tomato

salt to taste

Method :
  1. Heat oil in a deep pan or pressure cooker.

  2. Add cumin seeds.

  3. When cracking, add mutton and brown well.

  4. Add the ground spices and chili powder, turmeric, garam masala, salt and sugar.

  5. Fry for 3 minutes.

  6. Add capsicums and potatoes and fry for about 5 minutes.

  7. Add the yoghurt and cook for a few more minutes, mixing the gravy thoroughly.

  8. Add 2 cups water and simmer over low heat, or cook under pressure till meat is tender.

  9. Serve garnished with coriander leaves.

  10. This recipe usually includes 1/4 teaspoon onion seeds (Kalonji) if available.

  11. The seeds are added with the cumin.
