Onion Bhajis Indian Recipes

Ingredients :

115 ml


chick pea flour, sifted

vegetable oil plus extra for deep frying

ground coriander

ground cumin

fresh green chilies, seeded and finely chopped

warm water

onions, finely sliced

herb sprigs, to garnish


Method :
  1. Put flour in blender or food processor fitted with a metal blade.

  2. Add oil, coriander, cumin, chilies and water.

  3. Season with salt.

  4. Process until well blended and smooth, then pour batter into a bowl.

  5. Cover and leave in a warm place for 30 minutes.

  6. Stir in onions.

  7. Half fill a deep fat fryer or deep pan with oil and heat to 190oC (375oF) or until a cube of day oil bread browns in 40 seconds.

  8. Drop about five two-tablespoons amounts into oil and fry for 5-6 minutes, until golden.

  9. Drain on absorbent kitchen paper.

  10. Serve hot, garnished with sprigs of herbs.

Serves 4

Make sure that oil doesn't become too hot : the bhajis must fry slowly so centers cook through.
