fist-sized tamarind
cumin seeds, dry roasted and finely
pounded
salt

chili powder to taste (optional)
low-fat yoghurt
sprigs coriander leaves, chopped finely
boiled potato(180gm), cut into small cubes
large onion, chopped finely
pinch of salt |
Method :
- To make paapri, mix the wheat
flour, oil and salt.
- Add water bit by bit.
- Knead the flour to form smooth and
hard dough.
- Leave it for 10 minutes.
- Make 7 balls out of this dough.
- Roll out each ball to form thin
breads.
- Make tiny holes on the bread by
pricking with a fork.
- Cut into small cubes and deep-fry
on slow fire till light brown for at least 15 minutes.
- Take out and keep the papri aside.
- For the chutney, boil the tamarind
juice with sugar and salt for 10 minutes on high fire.
- When it thickens, turn off the
fire and add cumin seed and chili powder to it.
- Mix the papri, with the potato
cubes and onions.
- Pour the chutney over as desired.
- Add 300gm of yoghurt and garnish
with coriander leaves and salt.
