Prawn and Brinjal Curry Recipes

coconut milk, from 1/2 grated coconut
curry
powder, for fish
onions,
sliced
cloves
garlic, chopped
sprig
curry leaves
turmeric
powder
salt to
taste
chili
powder to taste |
Method :
- Dice brinjals.
- Add salt and turmeric.
- Heat oil in a wok and fry the
brinjals till brown.
- Remove from wok.
- Clean the shrimps.
- Add salt and a pinch of turmeric.
- Put into wok in which the brinjals
are fried, and fry till brown and quite crisp.
- Remove from wok.
- Add salt, curry powder, chili
powder and tamarind juice to coconut milk and mix well.
- Heat a little oil in the wok, and
fry onions, garlic and curry leaves till golden and fragrant.
- Add fried brinjals and prawns.
- Add the coconut mixture and allow
to simmer till gravy thickens and oil comes to the top.
- Serve hot with rice.
