Prawn and Brinjal Curry Recipes

Ingredients :

500 g

thick coconut milk, from 1/2 grated coconut

curry powder, for fish

onions, sliced

cloves garlic, chopped

sprig curry leaves

turmeric powder

salt to taste

chili powder to taste

Method :
  1. Dice brinjals.
  2. Add salt and turmeric.
  3. Heat oil in a wok and fry the brinjals till brown.
  4. Remove from wok.
  5. Clean the shrimps.
  6. Add salt and a pinch of turmeric.
  7. Put into wok in which the brinjals are fried, and fry till brown and quite crisp.
  8. Remove from wok.
  9. Add salt, curry powder, chili powder and tamarind juice to coconut milk and mix well.
  10. Heat a little oil in the wok, and fry onions, garlic and curry leaves till golden and fragrant.
  11. Add fried brinjals and prawns.
  12. Add the coconut mixture and allow to simmer till gravy thickens and oil comes to the top.
  13. Serve hot with rice.
