Prawns and Mustard Seeds Indian Recipes

Ingredients :

450 g

1/2 teaspoon

25 g

raw king prawns

mixed black and yellow mustard seeds


cayenne pepper

butter or ghee, melted

strips orange and lime zest, to garnish


Method :
  1. Peel prawns, leaving tail shells on, then make a small incision along spines and remove black vein.

  2. Push 2 or 3 prawns at a time onto short wooden skewers, then set aside.

  3. Reserve 1 teaspoon mustard seeds, and grind remainder in a mortar and pestle or coffee grinder.

  4. Transfer to a small bowl and mix in turmeric and cayenne and season with salt.

  5. Add 85 ml water and blend until smooth.

  6. Add prawns, turning to coat them in marinade and leave in a cool place for 30 minutes to marinate.

  7. Heat grill.

  8. Drain skewered prawns and place on a grill rack, brush with butter and sprinkle with reserved mustard seeds.

  9. Cook for 3-5 minutes, turning over once and basting occasionally with any remaining marinade, until prawns are just tender.

  10. Serve hot, garnished with orange and lime zest.
