Ingredients :

225 g

100 g

"atta" (Indian whole meal) flour

ghee

lukewarm water

vegetable oil for deep frying

pinch of salt

Method :
  1. Rub the ghee and salt into the flour.

  2. Gradually add some water to the mixture to form a firm dough.

  3. Divide into 2.5 cm pieces and roll out thinly.

  4. Heat the vegetable oil in a wok to a high temperature.

  5. If the oil is of the right temperature, the puri, when dropped in the pan, will immediately puff up and float to the surface.

  6. Fry until pale golden brown and drain on greaseproof paper.

  7. Serve immediately with a dry curry and vegetables.

Serves 4 - 6

This is essentially a deep fried chapatis traditionally served at breakfast with coffee.
