Spiced Mutton Recipes

boneless mutton, cubed
yoghurt
asafoetida (optional)
piece ginger, shredded
cloves garlic
cumin
khus khus
coriander
cloves
black peppercorns
almonds
medium onion, chopped
turmeric powder
water
oil
salt to taste
coriander leaves for garnishing |
Method :

Mix the yoghurt with the asafoetida
and add mutton.

Leave to marinate for 30 minutes.

Grind together the ginger, garlic,
khus khus, cumin, coriander, cloves, cardamom, pepper corns and
almonds, and add a few drops of water to form a smooth paste.

Heat oil in a pan and fry onions
till golden.

Stir in the turmeric and ground
spices and fry for a few minutes, stirring all the time.

Add a little water if mixture
dries.

Bring to the boil and add meat
mixture.

Fry for 10 minutes.

Reduce heat, cover pan and simmer
for 40 minutes or until meat is tender.

Remove cover, add water and cook
until liquid dries.

Add mixed spices and coriander
leaves.

Dish out into an ovenproof dish and
bake in low oven for 25 minutes.
Serves 6 - 8
