Spicy Meat Curry Recipes

beef, mutton or pork
large onions, sliced
sprig curry leaves
mustard seeds
cumin
small piece turmeric
pod garlic
fresh red chilies
ghee
vinegar and salt to taste |
Method :

Cut meat into bite sized pieces.

Grind garlic, chilies, mustard
seeds, cumin, turmeric to a fine paste.

Heat a ghee in a pan, add curry
leaves.

Add the onions and fry till golden.

Add the ground spices and fry for 5
minutes.

Add meat.

Stir well and brown for about 5
minutes.

Add 1/2 cup water.

Stir well then cover and simmer for
30-40 minutes, or until meat is tender.

Remove cover, add salt and brown a
little over high heat, adding vinegar to taste a few minutes before
serving.
Serves 6 - 8
