Spicy Okra Recipes

Ingredients :

350 g

2 tablespoons

2.5 cm

1 teaspoon

1/2 teaspoon

1 teaspoon

300 ml

2 tablespoons


vegetable oil

piece fresh root ginger, grated


chili powder

chick pea flour

natural yoghurt

chopped coriander leaves, to garnish


Method :
  1. Wash okra and pat dry with absorbent kitchen paper, then cut into thick slices.

  2. Heat oil in a saucepan, add okra and fry, stirring continuously for 4 minutes.

  3. Stir in ginger, turmeric, chili powder and chick pea four.

  4. Season with salt and fry for 1 minute more.

  5. Stir in 3 tablespoons water, then cover and cook gently for 10 minutes or until okra is tender.

  6. Stir in yogurt and reheat gently.

  7. Serve hot, sprinkled with coriander.

Serves 4

Choose okra pods that are about 10 cm long - larger pods are tough and stringy to eat.
