chick pea flour
natural yoghurt
chopped coriander leaves, to garnish

Method :

Wash okra and pat dry with
absorbent kitchen paper, then cut into thick slices.

Heat oil in a saucepan, add okra
and fry, stirring continuously for 4 minutes.

Stir in ginger, turmeric, chili
powder and chick pea four.

Season with salt and fry for 1
minute more.

Stir in 3 tablespoons water, then
cover and cook gently for 10 minutes or until okra is tender.

Stir in yogurt and reheat gently.

Serve hot, sprinkled with
coriander.
Serves 4
Choose okra pods that are about 10 cm long
- larger pods are tough and stringy to eat.
