whole red mullet, red snapper or sea
bream, each weighing about 225 g, cleaned

new potatoes, sliced
carrots, sliced
courgettes, sliced

Method :
Wash fish and pat dry with absorbent kitchen paper, then slash 3
times on each side. Mix masala salt, turmeric, coriander, parsley and ginger
together and rub into flesh and skin of fish. Tuck a slice of lemon inside each fish and set aside. Heat oil in a frying pan, add potatoes and carrots and fry,
stirring frequently, for 5-6 minutes, until slightly softened and
beginning to brown. Add courgettes to pan and fry for 1 minute more. Season with salt and pepper. Using a slotted spoon, transfer vegetables to a steamer. Lay fish on top, cover and steam for 20-25 minutes or until fish
flakes easily and vegetable are tender. Serve at once, garnished with coriander.
