Vegetable and Prawn Curry Recipes

Ingredients :

small prawns, shelled

brinjals, cut into 6 pieces each

ladies fingers, cut into 4 cm lengths

onions, chopped

cloves garlic, crushed

piece ginger, chopped

turmeric powder

ground fennel


chili powder

coconut milk, from 1/2 grated coconut

salt to taste

Method :
  1. Heat oil in a saucepan and fry the onions till golden.
  2. Add garlic, ginger and chilies and fry for a few minutes.
  3. Stir in the coriander, chili powder, fennel and turmeric and fry, stirring constantly, till oil separates.
  4. Add brinjals and ladies' fingers, salt and coconut milk.
  5. Bring to boil and reduce heat.
  6. Add prawns and simmer till gravy thickens (about 15 minutes).

Serves 6 - 8
