Method :
Place the
garlic, fennel seeds, sugar and salt in a pestle and mortar and pound
finely. Alternatively, grind the ingredients thoroughly in a food
processor. Stir in the shallots or onion, vinegar and cucumber and allow
to stand for at least 6 hours to allow the flavors to combine.
This sambal
has a piquant flavor without the hotness of chilies found in other
recipes.
