Method :
Cover the
tomatoes with boiling water to loosen the skins. Remove the skins,
halve, discard the seeds and chop finely. Place the chopped tomatoes in
a bowl, add the salt, chili sauce, fish sauce or soy sauce and
coriander.
Sambals are
placed on the table as a condiment and are used mainly for dipping meat
and fish. They are quite strong and should be used sparingly.
