Marinated Chicken with Snow Peas (Ayam Diasinkan dengan Kacang Kapri) Recipes

Ingredients :

2 cloves garlic, crushed

2 tsp root ginger, grated

1 lemongrass stalk, finely chopped

2 tbsp soy sauce

1 tsp sambal ulek

1 tbsp sweet soy sauce (kecap manis)

2 tsp sesame oil

500g chicken thigh fillets, thinly sliced

1 tbsp peanut oil

150g snow peas, trimmed and halved

230g can bamboo shoots, drained

Method :

Combine garlic, ginger, lemongrass, soy sauce, sambal ulek, kecap manis and sesame oil in a shallow dish to make marinade. Add chicken and coat well in marinade. Leave to marinate for 1-2 hours. Heat oil in a wok or frying pan. Add chicken (reserving marinade) and stir-fry for 4-5 minutes or until golden. Add marinade, snow peas and bamboo shoots and stir-fry for 2-3 minutes or until snow peas are cooked. Add a little water if the sauce becomes too thick. Serve directly from the wok. Have boiled rice available on the side.
