Sour Vegetables (Sayur Asam) Recipes

Ingredients :

1 tbsp peanut oil

1 tsp galangal powder

1 cup chicken stock

2 tbsp tamarind concentrate

1 tsp palm sugar or brown sugar

2 zucchinis, sliced

1 eggplant, diced, or 3 baby eggplants, sliced

1 cup shredded cabbage

150g green beans

 

Paste -

2 French shallots, chopped

2 cloves garlic

2 medium chilies, deseeded and chopped

1 tsp terasi

Method :

Crush or pound paste ingredients in a mortar with pestle or in a small food processor. If using a food processor you may need to add a little oil. Heat oil in a wok or saucepan. Add paste and galangal powder and cook for 1 minute. Add chicken stock, tamarind and sugar. Bring to the boil, add vegetables and cook for 6-8 minutes or until vegetables are tender. Can be serve as a main or side dish.
