Beef and Potato Bake Recipes

Ingredients :

1.5 lb potatoes, cooked and mashed

1.5 oz butter

1.5 eggs, beaten

1.5 oz Cheddar cheese, finely grated

freshly grated nutmeg

salt and pepper

Filling:

3 tbsp vegetable oil

12 oz minced beef

1 onion, chopped

2 sticks celery, thinly sliced

4 oz mushrooms, sliced

1/2 red pepper, cored and diced

1/2 green pepper, cored and diced

8 oz tomatoes, chopped

5 fl oz beef stock

chopped flat-leaf parsley, to garnish

Method :
  1. Preheat oven to 200C Gar Mark 6.

  2. Add the butter, eggs and cheese to the potato and season to taste with nutmeg, salt and pepper.

  3. Beat until smooth, transfer to a large piping bag fitted with a large star nozzle and pipe a border of potato into an ovenproof dish.

  4. Bake for 20-25 minutes.

  5. Meanwhile, heat the oil in a pan and gently fry the minced beef, onion, celery, mushrooms and peppers for 5 minutes, stirring to break up the meat.

  6. Stir in the tomatoes, breaking them up, then add the stock.

  7. Season with salt and pepper.

  8. Cook gently for 20 minutes, or until the meat is cooked, stirring frequently.

  9. Spoon the mixture into the centre of the potato border and serve hot, garnished with chopped parsley.
