Irish Meatloaf Recipes

Ingredients :

50g / 2 oz butter

25g / 1 oz fresh white breadcrumbs, toasted in the oven until dry and golden brown

1 small onion, finely chopped

500g / 1 lb minced beef

125g / 4 oz white breadcrumbs

1 tbsp tomato ketchup

1 tsp Worcestershire sauce

1 tsp crushed juniper berries

1 tbsp finely chopped chives

1 tbsp finely chopped parsley

1 tsp finely chopped oregano

1 egg, beaten

salt and pepper

quick tomato sauce, to serve

Method :

Grease a 19 x 9 x 5.5cm / 7.5 x 3.25 x 2.25 inch loaf tin with half the butter and dust with the browned breadcrumbs.

Heat the remaining butter in a saucepan. Add the onion and fry until soft, then add the beef and continue to cook until browning. Stir in the remaining ingredients and pack tightly into the prepared tin.

Cover the tin with foil and bake in a preheated oven, 190C (375F), Gar Mark 5, for 60-75 minutes until firm to the touch. Leave to rest for 10-15 minutes before turning out.

Serve cut in slices either hot or cold. Quick tomato sauce is a tasty accompaniment.
