Roast Stuffed Steak Recipes

Ingredients :

1 lb lean braising steak (thick slice)

3 tbsp vegetable oil or dripping

1-2 leeks, cut into large pieces

2 onions, quartered, or 8 whole shallots

6 oz Swede, cut into pieces

1 parsnip, quartered

2 large carrots, quartered

1 pint beef stock or water

Stuffing:

1 oz butter

1 onion, chopped

2 oz fresh breadcrumbs

1 garlic clove, crushed (optional)

1 egg, beaten

2 tbsp chopped fresh parsley

salt and pepper

Method :
  1. Preheat oven to 180C Gar Mark 4.

  2. To make the stuffing, melt the butter in a pan and fry the onion and garlic for 3 minutes.

  3. Remove from the heat and stir in the breadcrumbs, beaten egg, herbs and salt and pepper, mix well.

  4. Using a sharp knife, cut a neat pocket in the steak and fill with the prepared stuffing.

  5. Secure in a neat shape with wooden cocktail sticks, or tie with fine string.

  6. Heat the oil or dripping in a flameproof casserole and fry the steak on each side until seared and colored, about 5 minutes.

  7. Remove the meat form the casserole.

  8. Add the leeks, onions, Swede, parsnip and carrots to the casserole and fry for a few minutes.

  9. Stir in the stock or water and bring to the boil.

  10. Remove from the heat and place the steak on top of the vegetables.

  11. Season with salt and pepper.

  12. Cover and cook for about 90 minutes, or until the meat is tender, basting it occasionally with stock.

  13. Remove the cocktail sticks or string and serve the meat cut into slices, accompanied by the vegetables and cooking liquid, thickened if wished.
