cloves garlic, finely chopped

carrot, finely chopped

onion, finely chopped

stalk celery, finely chopped

finely chopped parsley

extra virgin olive oil

coarsely chopped pancetta

ground veal or beef

coarsely chopped chicken breast

finely chopped chicken livers

dried porcini mushrooms, soaked in warm water for 20 minutes, then finely chopped

dry red wine

fresh or canned tomatoes, skinned and coarsely chopped

salt

freshly ground black pepper

Method :
  1. In a large heavy bottomed saucepan, sauté the garlic, carrot, onion, celery, parsley and pancetta in the oil over medium heat until the onion turns light gold.

  2. Add the veal or beef, chicken breast and livers and cook for 5-7 minutes, stirring all the time.

  3. Add the mushrooms and cook for 5 minutes more.

  4. Pour in the wine and cook until it has evaporated.

  5. Add the tomatoes, season with salt and pepper, partially cover and simmer over low heat for at least 2 hours.

  6. The longer the sauce cooks the tastier it will be, so don't be afraid of simmering for 3 or even 4 hours.

  7. Add a little hot stock or water if it becomes too dry.

For eight, to serve with pasta, rice or vegetable dishes.
