Chicken With Onion Sauce Recipes

Spring Onion Sauce :

2 tablespoons

chicken thighs, boned and skinned

egg

broccoli, separated in florets

corn flour for coating

sake, soy sauce and sesame oil

red pepper, shredded, to garnish

vegetable oil for frying

each soy sauce and sake or white wine

mirin or 2 teaspoons sugar

sesame oil

spring onions, finely chopped

Method :
  1. Cut chicken, with skin on, into bite sized pieces and put in a large mixing bowl.

  2. Sprinkle generously with sake, soy sauce and sesame oil and leave to marinate for about 15 minutes.

  3. Meanwhile, make spring onion sauce by mixing together in a bowl spring onions, soy sauce, sake (or white wine), mirin (or sugar) and sesame oil.

  4. Cook broccoli in lightly salted boiling water for 3 minutes.

  5. Drain and keep warm.

  6. Roll chicken pieces in corn flour and shake off excess.

  7. Heat vegetable oil in a wok or deep frying pan to 170oC (340oF) and fry chicken pieces, several at a time, until well cooked and light golden, turning frequently.

  8. Do not add too much chicken at a time - the pan should not be more than two thirds full at any time.

  9. Drain well on a wire rack or absorbent kitchen paper and arrange in the center of a serving platter along with broccoli.

  10. Pour sauce over the top, garnish with shredded red pepper and serve at once.
