Chilled Soba Noodles with Nori Recipes

Ingredients :

12 oz dried soba noodles

1 sheet nori seaweed

For the Dipping Sauce:

1.25 cups fish stock

1/2 cup dark soy sauce

4 tbsp mirin

1 tsp sugar

1 tbsp fish sauce

Flavorings:

4 spring onions, finely chopped

2 tbsp grated daikon

wasabi paste

4 egg yolks (optional)

Method :

Make the dipping sauce. Combine the stock, soy sauce, mirin and sugar in a saucepan. Bring rapidly to the boil, add the fish sauce, then remove from the heat. When cool, strain the sauce into a bowl and cover. This can be done in advance and the sauce kept chilled for up to a week. Cook the soba noodles in a saucepan of lightly salted boiling water for 6-7 minutes or until just tender, following the manufacturer's directions on the packet.

Drain and rinse the noodles under cold running water, agitating them gently to remove the excess starch. Drain well. Toast the nori over a high gas flame or under a hot grill, then crumble into thin strips. Divide the noodles among four serving dishes and top with the nori. Serve each portion with an individual bowl of dipping sauce and offer the flavorings separately.
