Grilled Skewered Chicken Recipes

Tare Sauce :

3 tablespoons

70 ml

1 tablespoon

unskinned chicken thighs, boned and cut into 2.5 cm (1 in) pieces

spring onions, white part only, cut into 2.5 cm lengths

okra, trimmed

lemon wedges, sansho peppers and chili powder, to garnish

 

sake

soy sauce

each mirin and sugar

Method :
  1. Mix ingredients of tare sauce in a saucepan and bring to the boil.

  2. Remove from heat and set aside.

  3. If barbecuing, prepare barbecue.

  4. Thread 4 pieces of chicken and 3 okra alternately on to a 20 cm (8 in) bamboo or stainless steel skewer.

  5. Repeat with another 7 skewers.

  6. Thread another 8 with 4 pieces of chicken and 3 pieces of spring onion.

  7. Thread any remaining ingredients on to extra skewers.

  8. Cook on barbecue, keeping skewer handles well away from fire and turning them frequently.

  9. Brush with tare sauce 2-3 times during cooking, until chicken is well cooked and golden brown.

  10. If grilling, preheat grill.

  11. On a well oiled wire rack, spread chicken pieces well apart and cook under grill until both sides are golden brown.

  12. Dip pieces in tare sauce, put back on rack; grill for another 30 seconds on each side.

  13. Set aside.

  14. Lightly grill spring onions and okra without dipping in sauce.

  15. Thread 4 chicken pieces alternately with 3 spring onions on 8 skewers and with okra on another 8.

  16. Serve on a platter, garnished with lemon, sansho peppers and chili powder.

Serves 4-8 as a starter.
