Mix ingredients of tare sauce in a
saucepan and bring to the boil.

Remove from heat and set aside.

If barbecuing, prepare barbecue.

Thread 4 pieces of chicken and 3
okra alternately on to a 20 cm (8 in) bamboo or stainless steel
skewer.

Repeat with another 7 skewers.

Thread another 8 with 4 pieces of
chicken and 3 pieces of spring onion.

Thread any remaining ingredients on
to extra skewers.

Cook on barbecue, keeping skewer
handles well away from fire and turning them frequently.

Brush with tare sauce 2-3 times
during cooking, until chicken is well cooked and golden brown.

If grilling, preheat grill.

On a well oiled wire rack, spread
chicken pieces well apart and cook under grill until both sides are
golden brown.

Dip pieces in tare sauce, put back
on rack; grill for another 30 seconds on each side.

Set aside.

Lightly grill spring onions and
okra without dipping in sauce.

Thread 4 chicken pieces alternately
with 3 spring onions on 8 skewers and with okra on another 8.

Serve on a platter, garnished with
lemon, sansho peppers and chili powder.
